Before commencing make sure you have a suitable container for the remaining part of the leaf. 
A dish, shallow bowl or container such as the one pictured to the right.
This is because the aloin or sap will stain. Initially the sap appears yellow however as the leaf seals itself the sap will turn purple and stain what it is in contact with.

1. You need a fresh aloe leaf, a sharp filleting knife and a suitable surface for the process such as a chopping board .

2. Cut off the thin pointed end at a point where the leaf is thick enough to extract gel. Usually about 100 to 120 cm down from the pointed end. Discard that piece.
Then cut a portion about 7 to 10 cm long for use. Can be more or less to suit.

3. Trim off thorny edges and discard.

4. Directly under the skin on one side  cut along as close to the skin as possible. Similar to filleting a fish.

5. Discard skin. It has no use.

6. Turn aloe piece over and repeat filleting. Remember to cut as close to the skin as you can.

7. You now have your aloe  gel. It is very slippery and gooey.

8. Thoroughly rinse the gel. The aloin (slightly yellowy sap) that is between the skin and the gel is very bitter. Rinsing well is very important. *see note below

9. You now have the piece you need to make aloe juice.

Otherwise to continue for Aloe Juice put piece into a blender and add approximately 4 glasses of water and blend.
It will froth considerably so let sit a moment and then pour into a jug.

10. After a short time the froth will settle and you have fresh, nutritious and very healthy Aloe Juice. It can be flavoured to suit your taste.
Keep in the refrigerator. 
It will last up to a week but is best used within 3 days.

Refrigerated juice will keep for about 4 - 6 days.
T
he Fresh Aloe leaf will keep it's beneficial qualities for about 3 weeks stored in a cool and dry environment.
Only refrigerate leaf in hot, humid months. 
If you wish to extend the life of the juice naturally, add 0.5% Ascorbic Acid powder.
(Half a tsp per litre)
This will extend the life well beyond a month.
Ascorbic Acid powder is available in most health or organic stores.

* The yellowish sap between the skin and the gel can be harmful to some people.
Pregnant women can give their unborn child gastro problems due to sap's high concentration.
Women in advanced pregnancy, (4 months+), or women who are breast-feeding should ensure the aloin is completely removed by thoroughly rinsing with cold water.
For anyone the sap can have the effect of a laxative.
